Banana Sugar Crumb Muffins

My kids love banana bread for breakfast. And I love banana bread for breakfast, because I can make it ahead of time. No standing in front of the pantry wondering what we’re going to put in our bellies in the 10 minute window we have to eat before school. Win. Win. But if you’re a morning person and don’t mind waking up a little earlier, these can be made in about 35 minutes. This has become my go-to banana bread recipe for delicious breakfast muffins. Enjoy!

For the muffins
  1. 1 1/2C AP flour
  2. 1 tsp baking soda
  3. 1 tsp baking powder
  4. 1/2 tsp nutmeg
  5. 3/4 tsp cinnamon
  6. 1/2 tsp salt
  7. 3 brown bananas, mashed
  8. 3/4 C white sugar
  9. 1 tsp vanilla
  10. 1 egg, beaten
  11. 1/3 C butter, melted
For the sugar crumb topping
  1. 1/3 C brown sugar
  2. 2 Tbs AP flour
  3. 1/4 tsp cinnamon
  4. 1 Tbs butter
Instructions
  1. Preheat oven to 375 degrees.
  2. Prepare your muffin pan by lightly greasing 10 muffin cups or line with paper liners.
  3. In a large mixing bowl, combine the first 6 ingredients and mix well.
  4. In a separate bowl, mix together the bananas, sugar, vanilla, egg and melted butter.
  5. Stir the banana mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.
  6. In a small bowl, mix together the brown sugar, 2 Tbs flour and cinnamon. Cut in 1 Tbs butter until mixture resembles coarse crumbs. Spoon topping over muffins.
  7. Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.
  8. Enjoy!
