Blueberry Buttermilk Pancakes

This is the best recipe for buttermilk pancakes and it has become a staple for breakfast at our house. “Moooooommmy, can you make pancakes for breakfast?” Instead of saying ‘No, we have cereal bars in the cabinet!’ I grab my bowl and whisk, because these only take about 5 minutes to prep. And they are so. so. good! It’s summer now and we have blueberries coming out of our ears thanks to my in-laws who have huge blueberry bushes in their backyard. So recently, we’ve had lots of blueberry pancakes. But chocolate chips are the kids’ favorite add-in!

Buttermilk Pancakes
Delicious fluffy pancakes that are wonderful plain or with blueberry or chocolate chips!

  1. 1 C all-purpose flour
  2. 2 tsp baking powder
  3. 1 tsp baking soda
  4. 1/2 tsp salt
  5. 1 Tbl sugar
  6. 1 egg
  7. 1 and 1/4C buttermilk
  8. 1/2 C melted butter, divided
  9. 1 C blueberries, optional
  10. 1/2 chocolate chips, optional
  1. Mix dry ingredients in a large bowl. Make a well in the center of the dry ingredients and add the liquid ingredients, included 1/4 C of the melted butter. Stir until just incorporated.
  2. Cook pancakes on a lightly greased pan. If adding blueberries or chocolate chips, distribute these evenly on the pancake directly after putting it on the pan.
  3. As you stack your cooked pancakes, brush the remaining melted butter on the top of each.
